Making recipes 'Greener'

Your existing canteen recipes may only need a few changes to make them healthier. You can modify your existing recipes to be healthier by:

  • Changing to a lower fat cooking method such as steaming, baking, grilling, stir-frying or using oil spray and sauces.
  • Reducing the amount of fat, sugar or salt in a recipe or added for serving.
  • Substituting unhealthy ingredients for healthier ones (such as replacing sugar with fruit).
  • Adding fruit and vegetables and wholegrain products to increase fibre.
Experiment! But remember to trial and taste test any new recipes before selling them. Some recipes cannot be modified to be healthier and are best kept for special occasions! With limited equipment and preparation time, it is often hard to provide tasty meals. Jazz up your commercial 'heat and serve' foods with these ideas.
