Mushrooms - stuffed

Serves: 4
Ingredients:
500 g mushrooms, medium-sized
2 slices wholemeal bread, made into crumbs
2 rashers lean bacon, chopped finely
1 small onion, chopped finely
1 teaspoon thyme, dried
1 cup ricotta cheese, (250g)
1 tablespoon parmesan cheese, finely grated


Method:
Wipe mushroom caps, remove mushroom stems and chop finely.
2. Toast breadcrumbs in a dry frying pan, tossing until brown (take care not to burn them). Tip onto a plate.
3. In the same pan, cook bacon, onion, mushroom stems and thyme until onion is soft. Add breadcrumbs and ricotta and mix well.
4. Fill mushroom cups with breadcrumb mixture, sprinkle with Parmesan cheese and grill until brown.

Notes: These can be served as a meal or as an accompaniment to lean meats or chicken.
